Whole Wheat Instant Cococnut Dosa/Pancakes


Whole wheat dosa laced with freshly scarped coconut.

Or should I call it whole wheat pancakes??

It can be made instantly...no fermentation needed....no oil....fat free...less calorie....lots of fibre.

My mother in law is diabetic, I make diabetic-friendly food for her at times.

This is one such meal that I prepare for her as a breakfast.....and its Vegan!

Ingredients:
Whole wheat flour: 1 cup.
Water: About 1/2 to 3/4 cup or as needed.
Freshly scraped coconut: 1/3 cup.
Salt: 1/2 tsp.

Method:
In a bowl add flour, coconut, salt.

Add water to it and mix it....the batter should not be too thick or too loose.

Instead of cooking spray, I dip a cloth in oil and grease the hot tawa, sort of like a nonstick coating.

Put the fire on low and grease the tawa.

Pour 1 1/2 ladle full of batter on the tawa and spread out like dosa....you can make it too thin or thick.

Cover it with a lid and let it remain for 1 min and then flip it on the other side. Again allow it to stand for another 2 min. Always remember to cook in low flame. Grease the tawa with the cloth after each dosa.

That's it....instant whole wheat coconut dosa is ready to serve.
Serve with pickle.

Notes: To make it kid friendly can add molasses or sugar to sweeten the batter.

  9. Brill idea of using an oiled cloth on Tawa Nisa.. I usually use a damp paper towel after oiling the griddle everytime I have to spread the batter.. that sort of works well too.. but this is even better ..

    One question, how do you store that Cloth piece after use then?> Do you wash it everytime ? or have you made a container separately for that piece ?

Hi, Nupur, thanks for stopping by....yes oiled cloth is a life saver and acts as a DIY cooking spray....amma used to do this and so I followed her tips....yes you are right I keep it in a separate container....in a small steel container....which just fits the cloth....just put little gingelly oil into the container and then put the cloth in it....let it soak up the oil....then you can use for a good number of times and when you feel that the oil has dried up....add another tsp of oil....again when you feel the cloth has enough wear and tear, just discard it and make another one and again soak it with little oil...I never use cooking spray for making omelettes or any other which needs just greasing oil....this is my life saver...hope this helps :)
