Cutlets are great party appetizers and refrigerator friendly; meaning, you can store some breaded cutlets and fry them up when needed. These crunchy fish cutlets has been sitting untouched in my drafts for quite sometime now. With the festive season around the corner I think it's the right time to make some fish cutlets. I have posted vegetable cutlets which is my daughter, Nidhi's favorite. She just cannot stand fish.....a veggie by all means in a purely non veg family. These cutlets can be rolled in breadcrumbs and stored in the refrigerator for up to a week. Perfect to make beforehand  and use when needed. Just pop it in hot oil when ready to fry. Since this cutlet is made with tuna, I added a tiny weeny bit of garam masala otherwise for  fish cutlets you can omit the ever green garam masala...of course save it for meat cutlets and veg cutlets . My way of making sure that my kids have some vegetables is in the form of vegetable cutlets. Beef Sandwich Toast (Kerala Style)

Beef sandwich toast  with boiled potatoes is an easy kid friendly Kerala style sandwich toast, usually made for kids lunch box.  Amma used to make this for my two brothers and me to take to school, she will sometimes fill with left over beef cutlets .  I am sometimes lazy to roll up cutlets and so I fill the bread with cutlet mix and slather with good old butter and toast in my old gas toaster and the result is crunchy buttery toast....my kids love them. This cutlet mix is very versatile; I refrigerate it after adding boiled potatoes; and sometimes spread on Indian flatbread / roti and roll and heat it up with a dollop of butter or sometimes I make keema paratha with the cutlet mix minus the potatoes (with potato also its yum). Method: Pressure cook half kg beef with potatoes, vinegar, and salt for 15 to 20 min, evaporate if there is any water left on high flame. Allow it to cool and then mince it. Bread Rolls/cutlets......step-by-step.

We always observe Lent ....and abstain from meat and fish till Easter...for full 50 days....so you will see more of vegetarian cooking here till Easter. Amma used to prepare these bread rolls as an easy snack....I really don't know whether to call it rolls or cutlets.....all you need is some bread slices, some filling, little milk, and oil for frying...since it is Lent I prepared a vegetable filling which is same as my vegetable cutlet .... you can even fill it with beef or chicken. I L.O.V.E. my food processor...and it is probably the most used appliance in my kitchen...and is also probably the most photographed appliance on my blog. I use it for grating , chopping , mixing dough  .... If you have shoved your food processor on the top shelf of your pantry, its time to dust it off and place it in your kitchen. I have a sis-in-law who still haven't opened the cover of her food processor....which she got as a gift. She says that using it is a lot of trouble.....this post is definitely for those who thinks the same. Here are some of my successful ways to make food easy with food processor.....
